1 pkg. Apple Cake Mix; 2 eggs; 2 cups apples, chopped (any tart variety); 1 cup chopped walnuts (optional). (1) Preheat oven to 350 degrees F. Lightly grease 8x8x2-inches pan. (2) Combine all ingredients in a large bowl and stir until blended (liquid not needed in preparation). (3) Spoon into prepared 8x8x2-inches square pan. (4) Bake for 45-55 minutes. Serve warm or cold. Optional serving suggestions: Drizzle caramel sauce, a dollop of whipped cream or a scoop of vanilla ice cream over the cake. The possibilities are endless. Prepare cake batter as directed, replacing any of the following options for apples. Bake as directed. 2 cups of fresh peaches or pears; 2 cups of grated carrots or zucchini; 1 8 oz. can of crushed pineapple; 1/2 cup shredded coconut; 1/2 cup chopped walnuts or pecans. Muffin lovers recipe: (1) Preheat oven to 275 degrees F. (2) Spoon batter into greased or paper-lined muffin pan. (3) Bake 20-25 minutes. (4) Let cool for 5 minutes and remove to a wire rack. Tip: To test for doneness insert toothpick into center and remove. If clean, muffins are done!
