We created this robust mix of savory herbs, onions, and mustard to turn you into a veggie addict! Blend it into salad dressing, veggie dip, or a saute. We like to roast our veggies to bring out depth of flavor and create nice, crispy edges. Really, you can't go wrong with this rub.

Rubbed & roasted veggies approx 3 cups of vegetables. We recommend: carrots, onions, cauliflower, eggplant, mushrooms, butternut squash, or potatoes 1 tablespoon rub with love veggie rub (shake jar before measuring) 1/3 cup oil - olive or canola preheat oven to 400°f. Prep and chop your desired veggies to approx 2 inch portions. Mix oil with veggie rub. Toss the rub/oil mixture with veggies. They should be glistening with oil, not dripping. Spread rubbed veggies out on a sheet pan. Roast 10 min. Remove from oven to toss then replace and roast for approx 10 more min. Look for browning and crispy edges as veggies soften and caramelize. Finish with a squeeze of lemon and some fresh copped parsley. Yum!
