Basic Cooking Instructions: In a pan, put 5 tbsp of virgin olive oil and 1 chopped onion. Saute until soft. Add 2-1/2 cups of arborio rice and stir continuously until it is coated with oil. Add 1/2 cup of wine and stir until all of it is evaporated. Add 6 cups of chicken broth and simmer, stir frequently until liquid is absorbed and rice is done. In another pan add 3 tbsp of boiling water to a tsp of saffron threads and let sit for 5-10 minutes, or until dissolved. Then add to the rice. Stir in 2/3 cup of parmesan and sprinkle salt. Serve.
