What You Will Need: chicken; chicken stock. Included: brown rice; veggie blend; seasoning. 1 pkg. soup mix. 2 cups water. 4 cups chicken stock. 1 lb chicken breast (boneless, skinless). 1. Combine contents of soup mix, chicken, water and chicken stock in a stock pot. Bring to a boil, cover, reduce heat and simmer for 20 minutes. 2. Remove chicken from soup and let cool for 5 minutes. Shred with fork and then add back to soup. 3. Return to a boil, cover, reduce heat and simmer for an additional 10 minutes (Note: If using prepared chicken add during the last 10 minutes of cook time). Tip: Top each bowl with crisp tortilla strips and diced avocado just before serving.
