Preparation: Combine 1-3/4 cups water, 1 cup rice and a pinch of salt. Bring to a boil over high heat. Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes. Fluff and serve. A rice cooker may be used the same water to-rice ratio. 1 cup raw rice yields 3 cups cooked rice. Cook 1 cup rice. Warm 1 tbs sesame oil in wok or large skillet. Stir-fry 2 cups fresh or frozen diced vegetables and 1 cup chopped onion until tender-crisp. Push to side of pan. Cook 2 beaten eggs in pan; cut 2 beaten eggs in pan; cut in pieces. Stir in cooked rice, sliced scallions, and tamari or soy sauce to taste.
