Family owned since 1987. After the birth of our daughter Amy in 1987, we found there we little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we started Amy's Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy too cook. We use only the finest ingredients and prepare them with the same careful attention in out kitchen as your would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy's products. From our home to yours. We spent several years searching everywhere, including Thailand, for someone to help create the perfect Thai meals for Amy's customers, but with no success. And then, serendipitously, we found one of our employees, who was part owner of a Thai restaurant right here in Santa Rosa where our plant is located. We immediately asked him to prepare some Thai dishes for us, and he did. They were so delicious that we knew our customers would love them. This Thai Red Curry is Amy's dad's favorite. It has finely cut organic vegetables - sauteed onions, broccoli, carrots, tofu and delightfully sweet butternut squash - swimming in a traditionally spiced (but not too hot) smooth coconut milk-based curry sauce. Directions: ovens may vary. Microwave Oven: Make a 1-inch slit in overwrap. Cook on high for 4 minutes. Remove overwrap. Stir. Cook on high for 1 more minute. Let sit 1 minute. Serve. Conventional Oven: Preheat oven to 375 degrees F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 50-55 minutes. Let sit 1 minute. Serve. Toaster Oven: Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions. Perishable. Keep frozen.
