When preparing meatballs, hamburgers or meatloaf, add 2 tablespoons of Maizena to every 1 lb (450 grams) of ground meat. Crispy coatings! To make a crispy coating for your chicken or fish, combine 1 cup of Maizena, 1 egg and 1/4 cup of milk to make a batter. Coat chicken or fish and fry until golden. Delicious fruit smoothies! Follow the directions for traditional Atole, then freeze the mixture until it is frosty. Transfer it to a blender, add your favorite fruit and process until smooth and frothy. Add sugar to taste, if desired. Pour into a tall glass and enjoy! Traditional Atole: To prepare 1-quart (1 liter) of atole: Bring 1-quart of milk to a boil in a saucepan. Meanwhile, dissolve 3 tablespoons of Maizena in 1/2 cup of cold milk or water. Stir the cold mixture into the boiling mix and boil about 2 minutes, stirring constantly.
